Fast/healthy dinners for kids?

My son is 18 months old. My husband works from 2pm-11:30pm so he isn’t home to have dinner and I’m on a diet.. I cook for him three times a day, but I feel like I’m always making the same things.. a veggie (he only likes carrots, green beans and potatoes), some kind of frozen chicken that can be microwaved and some kind of bread (He likes brown & serve rolls and biscuits) What do you make you kids? I’m good with breakfast, but it’s hard to cook for just one little person! lol

Try doing a stir fry with the green beans, carrots and chicken with either brown rice or pasta. Use low sodium soy sauce or none at all. Leave the veggies mostly raw to retain the most vitamins.
If you use pasta he can pretty much eat it all by hand.
